Sweet potato Taco's

Ingredients

2 Sweet Potato's

1 Yellow Onion

4 Anaheim Chili's
-
Chili Powder
-
drizzle of olive oil
-
1 avocado (optional)

Corn tortillas or Ezekial bread
Pico-de-Gallo

4 Roma Tomato's
-
1/2 Yellow Onion
-
2 medium cloves garlic, pressed or minced
-
3 tablespoons of lemon or lime juice
-
1 to 1 ½ teaspoons salt, to taste

Freshly ground black pepper, to taste
INSTRUCTIONS

Peel and dice potato into 1/4 cubes. Place in mixing bowl. drizzle olive oil on potatoes and coat. Dust with chili powder and season with salt and pepper.

Place coated potatoes on parchment paper covered cookie sheet. Place in oven for 5 minutes at 425 degrees

slice onion and peppers (remove core and seeds) thinly into 3-inch slices. place in mixing bowl and drizzle with olive oil. Dust with chili powder and season with salt and pepper.

when potatoes have cooked 5 minutes, use spoon turn potatoes over then add onion and pepper mixture on top (spreading across cookie sheet) then place back in oven for another 15 minutes.

dice tomatoes and 1/2 yellow onion finely. mix in bowl. add minced garlic and lemon or lime juice place in bowl and refrigerate

heat tortillas in pan on both sides.

After potatoes, onion and pepper mixture is done. Remove from oven. Place tortillas on plate fill with potato mixture top with Pico, and a slice of avocado.
